Think of skirt steak as a loosely woven version of flank steak but with more flavor! Skirt steak is a lean cut of beef that benefits from marinating and is often cooked hot and fast over the grill, stovetop or stir-fried. Flavour comes at a price with this steak, meaning that a good pounding with a tenderizer will be necessary to will help loosen the connective tissues.
